Peach Ginger Smoothie

Makes 4 1/2 cups | Prep Time 5 minutes | Cook Time 0 minutes

When I was a kid, nothing compared to hearing the jingling bells of the ice cream man; it meant I got a Creamsicle. Looking for that taste again and to create something kids would adore, I came up with this recipe. One note: If you have a sensitive mouth or throat issues, omit the ginger to avoid irritation.

Instructions

Combine the peach nectar, yogurt, ginger, and half of the peaches in a blender and process until smooth. Add the remaining peaches and the flaxseeds, maple syrup, vanilla, and lime juice and blend until smooth and creamy. Serve immediately.

VARIATIONS: Add 1 tablespoon unrefined virgin coconut oil for additional healthy fat and calories.

For more protein, add a scoop of whey protein powder.

STORAGE: Store in an airtight glass container in the refrigerator for 2 days. Shake well before serving.

Ingredients

1 1⁄4 cups peach nectar

3⁄4 cup organic plain yogurt

1 teaspoon minced fresh ginger

3 cups frozen peaches, or 3 cups fresh peaches, pitted and chopped

1 tablespoon finely ground flaxseeds

1 1⁄2 teaspoons maple syrup

1⁄2 teaspoon vanilla extract

1⁄2 teaspoon freshly squeezed lime juice
